Gluten Free Spices
Glutens are proteins found in wheat and other types of grain. Glutens are also found in food additives such as flavorings, thickeners and stabilizers. Foods that are processed along with wheat, may contain small amounts of wheat due to cross-contamination. In the United States, the Food and Drug Administration classifies gluten as GRAS ("generally recognized as safe") so gluten is usually not listed among product ingredients.

What Is Celiac Disease?
Celiac (coeliac) disease is an auto-immune disorder affecting nearly 1 in 100 Americans. Celiac disease causes an allergic-type reaction to gluten, damages the small intestine, and prevents the body from absorbing food nutrients. The treatment for celiac disease is a lifelong gluten-free diet.
Careful reading of labels and ingredients is necessary for maintaining a gluten-free diet. Gluten may appear in non-food products such as lip balm or vitamins. Celiac sufferers must also ensure that nutrients lost through diet changes and lack of fortified foods are replaced via other sources (brown rice, gluten-free oats, quinoa). At this time the FDA is still trying to define rules for use of the "gluten-free" label.
